🎯 Mission
Responsible for the overall operation and performance of the assigned Food & Beverage outlet, ensuring excellent guest satisfaction, high-quality food and beverage standards, and strong financial results. The role ensures full compliance with hotel policies, safety, hygiene, and HACCP regulations, while promoting Meliá’s core values of Trust, Integrity, Respect, One Team, and Service.
📌 Main Responsibilities
• Manage and oversee daily outlet operations, ensuring smooth service flow and consistent delivery of brand standards.
• Lead by example in professionalism, grooming, punctuality, and service behavior in line with Meliá standards.
• Ensure the outlet and surrounding areas are clean, well-organized, and properly set up at all times.
• Deliver courteous, personalized service and handle guest inquiries or complaints effectively, ensuring proper follow-up.
• Ensure all team members are fully trained on outlet concepts, menus, products, and service procedures.
• Participate in menu planning with the Head Chef and Executive Chef, aligning offerings with guest expectations and market trends.
• Drive revenue through effective upselling and alternative recommendations while controlling costs and minimizing wastage.
• Prepare and analyze outlet performance reports, budgets, inventories, and monthly P&L results.
• Ensure accurate use of the POS system and compliance with opening, closing, audit, and internal control procedures.
• Plan flexible staffing schedules based on business levels and lead, coach, and evaluate team performance.
• Support internal and external audits and respond promptly to operational or management-driven changes.

• Vietnamese: Excellent | English: Good
• Minimum 3 years’ experience in a similar role in large hotels or international companies
