I will safeguard these pillars and its strategic planning and development and ensure all directives, practices and initiatives are implemented, embraced, adopted within the hotel. Duties and Responsibilities In this role, I will support the Chef de Cuisine and Sous Chef in assuming responsibility for the efficient operation of the Kitchen to provide exceptional product and service within brand operating standards. As Sushiman/Sushiwoman, I will be responsible of: • Executing the correct preparation and cooking of sushi rice, sauces and dressings, and I will follow the established recipes marked by the Chef de Cuisine • I will maintain the guidelines and standards of service and operation of Six Senses with special reference to sustainability and respect for the product, prioritizing quality and zero waste, in addition to the constant search for local products, in reference to sushi, emphasizing fish and shellfish. • I will check the quality of raw materials in the assigned area, as well as their storage, handling and use. • I will check incoming products, ensuring that all food merchandise is in accordance with order forms, receiving records, and purchase specifications. Skills and Experience To execute the position of Sushiman/Sushiwoman, I have the required qualifications and technical skills: • I have a minimum of one year of experience in a similar role, preferably in luxury hotels, with proven results. • I hold a Diploma in Culinary Arts or a similar qualification. • I have solid expertise in preparing sushi, sashimi, and other Japanese dishes, with a strong passion for quality and good knowledge of Asian products. • I possess excellent knife skills, a good understanding of meat and fish cookery, and proficiency in the use of broiler equipment. • I have written and spoken Spanish skills, and knowledge of English is considered an added advantage.
