About the job
Based at Mandarin Oriental Punta Negra, Mallorca, as the Pastry Chef de Partie, you will be responsible for overseeing the pastry section of the kitchen, ensuring that all desserts and baked goods are prepared to the highest standard and in line with the restaurant’s quality and efficiency. This position involves managing the preparation, baking, and presentation of pastries, as well as ensuring cleanliness and adherence to food safety regulations.
As Pastry Chef de Partie, you will be responsible for the following duties:
Prepare, bake, and present desserts, pastries, and other baked goods within your designated section.
As Pastry Chef de Partie, we expect from you:
Experience and education
Technical Skills
Proficiency in Various Pastry Techniques such as puff pastry, laminated dough, choux pastry, cake decoration, and sugar work.
Familiarity with specialized pastry tools and equipment (e.g., mixers, ovens, chocolate tempering machines) and their proper use and maintenance.
Proficient in the use of knives for delicate preparation, such as cutting, shaping, and garnishing desserts.
Comprehensive knowledge of food safety standards specific to pastry kitchens, including storage, handling, and sanitation procedures for ingredients.
