About the Job Based at the Mandarin Oriental Ritz, Madrid within the Food & Beverage department, the Restaurant Manager is responsible for the daily operation, leadership, and performance of the restaurant. This role ensures the delivery of exceptional guest experiences, drives financial results, and leads a high-performing team aligned with Mandarin Oriental standards. The Restaurant Manager reports to the Director of Restaurants / Assistant Director of Food & Beverage. As Restaurant Manager, you will be responsible for the following duties: • Lead, inspire, and manage the restaurant team to deliver outstanding, intuitive, and refined service. • Oversee daily operations, ensuring service flows smoothly and efficiently at all times. • Maintain the highest standards of food, beverage, and service quality in line with Mandarin Oriental expectations. • Manage staffing levels, scheduling, and productivity to meet operational needs and financial targets. • Drive revenue, profitability, and cost control, including labor and inventory management. • Ensure compliance with health, safety, hygiene, and food safety regulations. • Handle guest feedback professionally, resolving issues swiftly while exceeding expectations. • Collaborate closely with the kitchen and sommelier teams to ensure seamless guest experiences. • Lead training, coaching, and development initiatives to build a strong talent pipeline. • Conduct regular briefings and performance evaluations. • Monitor reservations, table allocation, and service timing to maximize capacity and guest satisfaction. • Maintain impeccable presentation of the restaurant, equipment, and team appearance. • Support strategic initiatives, promotions, and special events. • Act as a role model for Mandarin Oriental’s culture, values, and luxury service standards. As Restaurant Manager, we expect from you: • Minimum 2 years of experience as Restaurant Manager in a luxury hotel or high-end standalone restaurant. • Proven leadership skills with the ability to motivate, coach, and develop teams. • Strong operational knowledge of food and beverage service. • Financial acumen, including budgeting, cost control, and revenue management. • Exceptional guest-service mindset with excellent problem-solving skills. • Excellent communication and interpersonal abilities. • Fluency in Spanish and English (spoken and written). • Ability to work under pressure in a fast-paced luxury environment. • Strong organizational skills and attention to detail. • Flexibility to work evenings, weekends, and holidays. • Legal right to work in Spain.
