Position Summary
The Food & Beverage Sales Manager is responsible for generating food and beverage revenue by driving restaurant covers, private dining bookings, banquet events, catering sales, festive promotions, and outlet performance. This role will focus strongly on direct sales of dining experiences, increasing guest traffic, repeat business, and maximizing spend across all food and beverage outlets.
Key Responsibilities
Food & Beverage Revenue Generation
• Drive daily, weekly, and monthly sales performance for restaurants, bars, lounges, room dining, and banquet operations.
• Increase restaurant reservations, walk-in business, and repeat dining guests through proactive sales activities.
• Generate revenue through private dining, birthday celebrations, social gatherings, weddings, and corporate meals.
• Maximise banquet and catering revenue through meetings, coffee breaks, lunches, dinners, and special events.
• Create sales strategies to increase average spend per guest, upselling menus, beverage packages, and premium experiences.
• Focus on outlet occupancy during low-demand periods through promotions and targeted sales actions.
Outlet Promotion & Business Development
• Develop promotional calendars for brunches, happy hours, themed nights, festive dining, and seasonal campaigns.
• Drive sales for signature restaurants, speciality dining venues, bars, and lounges.
• Promote takeaway, delivery, outside catering, and special occasion packages where applicable.
• Identify new local dining markets and opportunities to increase food and beverage revenue.
Guest Experience & Retention
• Build strong relationships with repeat guests and VIP diners.
• Ensure personalised dining experiences that encourage guest loyalty and return visits.
• Handle guest feedback professionally and convert service recovery into future business opportunities.
Financial Performance
• Support budgeting and forecasting for all food and beverage sales streams.
• Monitor outlet revenue, covers, average checks, and promotional performance.
• Ensure achievement of monthly and annual revenue targets.
• Analyse trends and implement corrective actions to improve sales performance.
Internal Coordination
• Work closely with the Executive Chef, the Director of Food & Beverage, Restaurant Managers, Banquet Operations, and Marketing teams.
• Ensure smooth execution of events, promotions, and dining campaigns.
• Train outlet teams on upselling techniques and revenue opportunities.
Candidate Profile
• Degree in Hospitality, Business, Marketing, or related field.
• Minimum 2 years of experience in Food & Beverage sales, restaurant sales, banquet sales, or hotel commercial roles.
• Strong understanding of restaurant operations and guest dining behavior.
• Proven track record in increasing covers, banquet revenue, and outlet profitability.
• Strong communication, sales, and negotiation skills.
• Fluent in English; additional languages are an advantage.
• Passion for food, beverage trends, and luxury hospitality.
