Stock and inventory management, and understanding of food cost
Basic knowledge of the group's artistic direction
Quality control and supervision of mise en place, knowledge of hygiene and safety regulations
Management of the pass and service
Knowledge of advanced cooking techniques, recipe reproduction, and knowledge of fresh pasta
Training of junior staff, onboarding, and team motivation
