For our Amsterdam based Element hotel we are looking for a creative, self-motivated organized and experienced head chef.
As a head chef at Amsterdam Element Hotel you will be responsible for all that is food related in all our F&B outlets (Spanish restaurant Gordal, the Gordal rooftop terrace, Elements "Rise" Breakfast, Meetings and Events). You will guide a team of 9 associates in kitchen and stewarding and you will report directly to the General Manager.
You will be responsible for:
o Creating SOPs and making sure that the work is achievable. (Recipes, photos, out costing).
o Leading the entire kitchen and stewarding department in an enthusiastic and motivating way.
o The quality control of all production, and possibly correct it.
o Ensuring hygiene in the kitchen according to HACCP regulations.
o The Conception and development of new menus.
o Checking the correct use of kitchen equipment and products during food preparation.
o Organizing and lead kitchen meetings and participate.
o Motivating and guiding staff through performance appraisal and assessment interviews and problem solving discussions where necessary.
o Organizing rosters and ensuring adequate staffing within the budget.
o Controlling the Food Cost in accordance with the budget.
o Setting up an active training policy by identifying the needs, coordinating the training itself and the care of a good registration system.
o Monitoring the budget.
o Preparing nicely presented plates, dishes etc. by performing a la minute cooking activities, portioning and garnishing dishes and controlling the presentation according to recipe (Portion Control).
o Making the orders and obtaining ingredients from the stores. Make sure stores are kept tidy and neat at all times by every individual in the team.
o Ensuring an optimal employee satisfaction. You create a work-environment that contributes to a low staff turnover and low illness figures.
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities;
- Fluent in speaking and writing English is a must!
- A minimum of 2 years of experience as a head chef
- Extensive experience in international hotels
- Wide knowledge and skills in Spanish classic AND contemporary cuisine
- Experienced with global HACCP standards including cleanliness, hygiene and registration
- Following food safety requirements
- Good knowledge and experience with MS Word and Excel
- Extensive understanding of figures, food cost reporting and P&L reports
